As a food blogger on the subject of baking just before
Christmas, of course, an absolute mega-disaster! But we are inventive! And so
it happened that these chocolate cookies were baked in our little pizza oven.
But don't worry! Of course, you can also prepare them in a
normal, functional oven. Provided you have one.
These vegan chocolate cookies are super soft thanks to the
starch in the dough. If you prefer crisp, then simply replace the corn starch
with flour and it will crunch between the teeth.
For the glaze, we melted the chocolate with some coconut oil.
The melting temperature of coconut oil is about 25 degrees, which causes the
chocolate glaze to melt a little faster.
So it's best not to hold your fingers for too long, but right
down in your mouth!

Recipe for vegan chocolate chip cookies
Baking time: 30 mins
Working hours: 30 mins
Servings: 2 plates
Ingredients
For the chocolate cookies
- 200 grams of flour
- 50 grams of cocoa powder
- 50 grams of starch
- 100 grams of sugar
- 2 teaspoons of cinnamon (optional)
- 150 grams of margarine
- 2-4 tbsp water
For the glaze
- 100 grams of block chocolate
- 2 teaspoons of coconut oil
Instructions
- For the vegan chocolate cookies, mix all the dry ingredients, i.e. flour, cocoa, starch, sugar, and (optional) cinnamon.
- Add the margarine in pieces to the dry ingredients and knead everything into a smooth dough. Depending on how dry the dough is, add 2-4 tbsp of water until a homogeneous mass can be kneaded.
- Leave the dough to rest in the fridge for at least an hour. It is best wrapped in a fresh holding box or in plastic wrap.
- After cooling, knead the dough again on a floured work surface and roll out about 5mm thick.
- Cut out molds with cookie cutters or a glass and place on a baking sheet lined with baking paper.
- Bake the chocolate cookies at 200 degrees over/under heat for about 15 minutes. They should still be a little soft when you get them out of the oven.
- Leave the cookies completely cool.
- In the meantime, melt the chocolate together with the coconut oil in the water bath. You can also leave the coconut oil away. Without the coconut oil, the glaze is a little firmer.
- Decorate the chilled chocolate cookies with the melted chocolate as desired.
- Let the chocolate dry.
